The Best Kale Chips on the Face of the Planet

I really struggled sharing these. I really love my boyfriend, but wow. Feel free to double/triple/quadruple this recipe, b/c I know you will want more.

You will need:

1 bunch lacinto (flat, not curly) kale
3 tsp extra virgin olive oil
1/2 fresh squeezed lemon
1 tsp Redmond’s seasoned sea salt
1 tsp thyme

Peel middle stems from Kale and toss (or save for juicing). In large bowl, mix kale leaves with all ingredients and toss/massage until well coated and soft. Lay out leaves separately on two large dehydrator sheets, and let dry for ~3 hours at 110 degrees. If you don’t own a dehydrator, you can make these in your oven on a low setting, with the door cracked, only until crispy (much less than 3 hours). Enjoy!!
