Fresh Spinach Tacos!

Dinner 🙂
Spinach tacos, fresh from the farmer’s market!

Saute in olive oil and pinch of sea salt:
1 yellow zucchini
1/2 onion
3 mixed peppers 
1 cup spinach

Topping:
handful of micro greens
tomatillo salsa 
+ Warm corn tortillas
Delicious!!!
