Cooking Kasha (Buckwheat)
This was my first time cooking kasha (buckwheat), and I LOVED it! I found this at Kroger in the rice section.
Just follow the directions on the box (one cup kasha to 2 cups broth), but replace broth with vegetable broth, butter with Earth Balance. Add cooked chickpeas (I used canned) and chopped collard greens (3 large leaves) 5 minutes before it’s done. Great with Miso Mayo (www.misomayo.com) and a baked sweet potato! No salt needed.
1 cup dry whole grain Kasha (Buckwheat) groats
2 cups vegetable broth
1 can chickpeas in water
3 large chopped collard green leaves
1 tbsp Earth Balance “butter” (made with healthy fats!)
Miso Mayo to taste
