Holy Moly Guacamole!

Whipped up a yummy batch of my all-time favorite Cinco de Mayo dish – super simple guacamole.

You will need:

6 large avocados
1/4 cup chopped cilantro
1/4 cup chopped red onion
2 small chopped tomatoes
2 small limes, squeezed
2 small garlic cloves, chopped
1 tsp chipotle chili powder
~1 tsp fine sea salt (to taste)

Peel and mash (I used a large soup spoon, but I’m sure a potato masher would be much more efficient) the 6 avocados, mindful of the small knob thingy on the end – do not let this fall in your guac or you will be sorry!! Add remaining ingredients, and mix well until no large chunks remain. Be sure to dice/chop/mutilate all ingredients into small pieces. Serve with some GMO-free corn chips (we used Tostito’s gluten-free organic) and ENJOY! Preferrably with a margarita 🙂 Ahhh, perfection!

NOTE: Be sure to wash your hands immediately after unless you plan to have a date with garlic… trust me.
