Lemon Garlic Artichoke Wrap

We had artichokes at our favorite local Greek restaurant last week, and have been addicted ever since. Eating out can get expensive, so we decided to recreate our own. We found some gluten free teff wraps at the store, so we added our own little twist by making it into a wrap. You can enjoy it with or without!

You will need:
2 jars marinated artichokes in olive oil
(we used Native Forest marinated artichoke hearts)
1 cup (uncooked) jasmine rice
2 tbsp lemon juice
1 tsp garlic
1 tsp sea salt
1 tbsp Earth Balance
teff wraps (we used Sonoma brand) – optional

Bring 1 1/2 cups water to boil. Add jasmine rice, reduce heat and cover for about 10 minutes. Add in Earth Balance, lemon juice, and garlic. Add artichokes (including marinade) and sea salt last. Heat teff wrap in skillet, add rice/artichoke mixture and serve. Hope you enjoy! We enjoyed ours with some gluten-free Kahlua, Chambord and hemp milk cocktails. 🙂
