Watermelon Cake!

Who needs a traditional cake with sugar, wheat, gluten and dairy when you can make a pretty cake like this!

All you need is a truly delicious seedless watermelon (this YUMMY one was an organic melon from Natural Grocer’s…) sliced into circles with the rind removed, some berries and fruits of choice, some toothpicks and skewers. I happened to find these at the dollar store. We melted a dark Chocolove bar with some coconut oil to drizzle on top.

Annnd you’re done! (Preferrably make this right before you serve it so the watermelon doesn’t lose water and puddle up on your tray.)
