Soyrizo Hash Stuffed Bell Peppers

Bell peppers are a very good source of vitamin C, and are great for cardiovascular and overall health as a rich source of phytonutrients and antioxidants. With only about 30 calories each, these impressive little peppers contain protein, fiber, Vitamins A, B1,6 & 9, C, & K, Iron, Magnesium, Phosphorous, Potassium, and Calcium! You want to be getting more of these into your diet! Try to purchase these organic, since it is very difficult if not impossible to rinse pesticides away from it’s thin skin covering. One of my favorite ways to eat them is stuffed.

To make these, you will need to refer to my Breakfast Taco Recipe here. We used leftover soyrizo and hashbrown/nooch mix to stuff two bell pepper halves, and mixed in a little of the leftover tomato/chilies to give it a little kick. Place in an oven safe dish and cook at 350 degrees for about 20 minutes, just until the peppers are a little soft. Add a little sriracha if you really like it spicy! Your health and your mouth will thank you.
