The Best BLT EVER + Coconut Bacon Cupcakes!

Isn’t it funny how you can have the same thing made the same way over and over again for years, and then you meet someone else who changes just one small thing, and it’s the best thing you’ve ever had? My boyfriend made one of the best vegan BLTs EVER for dinner tonight, and with something I’d never tried. Avocado, onion and ketchup. Don’t judge, just try it.

I wasn’t planning to take a picture of this until I had a bite of it, so that should explain things. I’m not going to list out the recipe since nothing’s exact… we used gluten free/yeast free multigrain bread (found in the frozen section of our health food store since not many people buy this stuff), added some sliced (organic) tomatoes, ketchup (we used Amy’s brand), diced red onion, and yes, avocado. Mmm. OH, and the BACON! I used this recipe – made out of coconut flakes! It’s amazingly one of the closest things to real bacon that I’ve made – in fact, I think it’s better. It’s crunchy and salty and slightly sweet, and it doesn’t get soggy and gross like the real thing. Just watch it carefully and don’t bake it very long – it tends to burn easily. Toss it often. This bacon-making is a VERY common occurrence at our house!

Once we discovered this bacon, we decided we had to try it on EVERYTHING. Coconut bacon chocolate (try it with a ChocoLove Sea Salt Almond bar), coconut bacon caramel almond milk gelato, and my favorite… coconut bacon CUPCAKES. Yep. (Do not eat these every day… this was a special occasion – last day at my job.)

I just used Bob’s Red Mill gluten free vanilla cake mix with coconut oil and Ener-G egg replacer (or use flax and water), and I used a vegan frosting mix (mostly just powdered sugar and vanilla) from the health food store (sorry, I can’t remember the name) with almond milk and coconut oil (extra virgin). These didn’t last very long – even with regular bacon eaters.
