Nom nom nom. Sometimes I love [good vegan] food too much.
Who doesn’t love tacos?
This weekend, my dad was visiting, and we wanted to make him something vegetarian that he’d like. Mission accomplished. My dad’s official review of these tacos was “Mmmm!”.
I think you’ll like them too.
We used >>this easy peasy recipe<< from the fabulous Good Food Galore, just added a can of diced tomatoes and a few chipotle peppers, and used gluten free tamari instead of soy sauce. No salt needed. Just the right amount of smokey and spicy and salty and sweet, all the the same time. Pictures don’t do these justice.
Serve with toppings of your choice (such as yummy homemade guacamole and Tofutti sour cream).
Best. Tacos. Ever.
