Openface Avocado Tacos

Just ship me off to Mexico and I’d be one happy camper. I could live off nopales and avocados alone. One of my favorite simple meals is tacos… especially ones that involve fresh veggies like avocado, chili peppers, colorful bell peppers, and onion. They’re easy to prepare and have crazy-good health benefits: bell peppers full of vitamin C, healthy fats in the avocado, curcumin in the chili peppers which helps with inflammation, and many phytonutrients that can prevent disease.

These are so easy!

What you need:
1 small green and 1 small red bell pepper (organic), sliced into strips
2 ripe avocados, sliced into strips
1/2 small white onion, sliced into strips
4 small canned chipotle peppers, diced (or to taste… pretty hot stuff)
organic cilantro, to taste
1 package organic corn tortillas
Tomatillo salsa to taste
Tofutti sour cream to taste
Olive oil spray for tortillas
Shot of lime juice

Sautee onions, bell pepper, chipotle peppers, cilantro and a bit of water on medium heat in a skillet. You can add some seasoning if you’d like (maybe some chili powder, paprika), but these canned chipotle peppers come packed with flavor. In the meantime, heat up those tortillas with a little olive oil spray and lime juice. I didn’t add any salt since the salsa adds plenty. Once the tortillas are warm, add bell pepper mixture, sliced avocado, toppings, and serve!

Why organic tortillas? Corn is a highly genetically modified crop. BT toxin in gmo corn is not good for our guts, or our health in general. Just google for more info! I got these for $1.50 at Natural Grocers.
